Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Chicken with Noodles Part two

CHICKEN WITH NOODLES

1 large fowl, cut in pieces

6 cups cooked noodles

1/2 pound sliced mushrooms

1/2 teaspoon salt

dash of pepper

 3 tablespoons butter

 1 cup chicken broth

1 cup milk, scalded

1/2 cup buttered bread crumbs

Cook chicken until tender and remove meat from bones.

Place hot noodles, chicken and mushrooms in alternate layers in greased hot casserole, using 1/2 of each; repeat layers with remaining amounts.  Add salt, pepper and butter to hot broth and milk pour over filled casserole; cover with crumbs and bake, uncovered in moderate 350 degree oven about 20 minutes or until browned.  

Serves 6 to 8 portions

This dish will need some prep time.  The top right bowl has cooked chicken with bones removed and the meat pulled apart.  The large measuring cup has one cup of chicken broth from when I boiled the chicken and one cup of milk.  Then the left is homemade egg noodles (before cooking) and the front left is sliced mushrooms.

I mentioned in the article grocery ads that I revised the noodle recipe.  I use one egg, 1/2 teaspoon salt and 1/2 cup of flour.  For this dish, chicken with noodles  I used 2 eggs, 1/2 teaspoon salt and 1 cup of flour to make the noodles.

I make a mound with part of the flour and work that together then add the remaining while kneading the flour.

This is the dough after kneading for about 5 minutes.  I sprinkled some of the remaining flour on the counter, rolling pin and dough.

When you first start rolling the dough it wants to spring back.  Just rub a bit of flour on top, flip it over a little more flour on top and roll, keep doing this.

Flip it over often and keep putting a thin rubbing of flour each time before flipping and before rolling.

roll it out until it is very thin...

you need a lot of space to make noodles or you can cut the dough in half and roll each half but it takes so much time to roll it out to where it does not want to spring back I like to just roll all of it at once.

I always use a pizza cutter to make my noodles..

Let it sit there for awhile to dry some because that will make it not stick together when you take it up with the spatula.

Toss it over into a pan so it will be ready to put into the boiling water.

I made these just a bit thicker than I normally do because it is going into a casserole dish.

This is the cooked and shredded chicken that will be going into the dish.

Just before time to assemble the Chicken with Noodles casserole boil the noodles for 10 minutes and drain them.

I am using this pot to put the casserole in.  This is the first bottom layer of chicken.

Now I have put a layer of noodles on top of the chicken...

A layer of sliced mushrooms on top of the noodles then I started over with the second layer, chicken, noodles, mushrooms.   So I halved everything before I did the layers.

Here I poured the broth, milk and butter mixture over all the layers.

The recipe says to sprinkle buttered bread crumbs over the top.  So I just put two tablespoons of melted butter over the half cup of crumbled bread and tossed it together then put it over the top and baked in the oven.  I baked it for 30 minutes instead of 20 minutes.

This pot I baked it in is another reason I gave it extra baking time.   I baked it without the lid because the breadcrumbs need to brown.

My husband really enjoyed this meal, maybe a bit too much with the extra helpings :)

I served sauted green beans with garlic and applesauce.

To saute green beans put a couple of tablespoons light olive oil or vegetable oil in a skillet and saute the beans until the caramelize  (bits of brown). Then I turn down the heat and put the lid on it to steam it for a bit and just before they are done add chopped garlic and toss it around but don't let the garlic cook too long and get brown because it will get bitter.   

The Chicken with Noodles take a bit of doing but is easy on the budget because whole chickens are less expensive, the noodles are just flour egg and salt, the broth is from boiling the chicken and it does not take a lot of milk and butter. The mushrooms were about $1.50. 

Many of the things we do to save money does take some time to do because easy costs money.
