Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Gannys Gluten Free Skillet Cakes

Cooking Gluten Free takes a little bit of creative thinking and a few extra bowls but the effort will be worth it when you taste these Ganny Skillet Cakes.

The recipe will be in three parts and pictures will follow
 
To make light fluffy cakes we need something to make the batter lift up a bit so here are the three ingredients then the three parts.
 
1 and 1/4 cup Milk (this will be separated)
1 and 1/2 teaspoons vinegar
2 Tablespoons plain yogurt
1/4 heaping teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon cream of tarter
1/2 teaspoon salt
1 cup gluten free flour mix, I use Bloomfield farms Gluten Free all purpose baking mix
2 large eggs
2Tablespoons sugar, I use organic sugar
 
Measure 1/2 cup milk and put it in a small bowl, add 1 and 1/2 teaspoons vinegar to this milk and stir.  Set aside
Measure 3/4 plain milk and set that aside for later
 
Measure 2 Tablespoons yogurt and put in medium size bowl, add 1/4 heaping teaspoon baking SODA to the yogurt and then add 2 Tablespoons of the milk mixture that has the vinegar in it. mix this together with a spoon or fork until light and fluffy. The baking soda, yogurt milk mixture that has vinegar will cause this to get foamy and puffy.  Set aside..
 
Measure out 1 Cup Flour into a larger bowl, add 2 teaspoons baking POWDER, add 1/4 teaspoon cream of tarter, add 1/2 teaspoon salt and whisk these dry ingredients together.
 
Beat the two large eggs in a medium size bowl then add the remaining vinegar milk mixture to the eggs and stir.

 Add the egg mixture to the flour mixture then add the remaining 3/4 cup milk stir and then add 2 Tablespoons Sugar and stir again.
