Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. About the boiled chocolate frosting and a story

A boiled frosting is a more old fashioned frosting and boiled frosting and puddings are a bit of a technique but not hard to do.

I recently posted a recipe for a yellow cake with boiled chocolate frosting.  A couple of people are having issues with it being too thin, it is softer than most frosting's of today but it is not suppose to be runny so I updated the page with the yellow cake with boiled chocolate pudding to clear up a few things.

That said, don't give up on these old fashioned recipes, practice making them so they can be passed down.

This particular boiled chocolate frosting is something like a thick pudding.  It does not harden but remains creamy.  It should not run off the cake either.

Also sometimes boiled frosting's and pudding's will need to be strained through a fine metal strainer to remove cornstarch lumps if it happens to lump.

If you whisk it real fast when you are bringing it to a boil it should not lump but when first learning to make it it might lump so then you will need to strain it which I have had to do myself on occasion.

I don't like posting recipes because I am always concerned I will leave something out or transpose a measurement but I checked the measurements and they are correct.

Cooking old fashioned is a learned skill by doing and is very rewarding because we are using less processed ingredients.

Years ago when I was young, people would go fishing often.  We lived in the city at this time and we had a very small cottage at a lake. This was a very rural area and some people did not have electricity in the more rural areas outside of where our cottage was.

An older couple lived down a dirt road from our cottage and my brother and I would walk down the road leading to their house.  One day the couple invited us up to their porch. This was out in the country/woods area. there were chickens running around the yard and a chicken house off to the left.  They did not have electricity.

The nice lady came out with two pieces of cake for my brother and I, it was a yellow cake with boiled chocolate icing. I never forgot the taste of that cake or this lovely couple my whole life.  

When I married I asked different members of my family for their recipes, my mother always traded and saved recipes and I tried several of the cake and frosting recipes until I found the one that tasted like the one I remembered.  

But what I know now that made it the most special is she had fresh eggs from the hen house, the flour just seemed better back then as well as the other ingredients and they did not have electricity so it was baked in a wood burning stove.  That was one thing that had us explore that dirt road in the first place, the smoke coming out of their stove pipe.

They were a lovely couple and occasionally seen coming down the road riding in their horse drawn wagon and we would always run to wave at them as they passed by. Grandma Donna
