There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Dehydrating Sweet Potatoes

I am making Ground dehydrated sweet potatoes
 
First start off with good healthy sweet potatoes and wash them then put them whole into a large boiler.  This is a large pot.
 
Boil the potatoes until you can push a fork through them.  You will need to take the smaller ones out first and keep testing them.  Sweet potatoes do not take long to cook. 
 
Remove the sweet potatoes to a cooking rack
 
These are the larger sweet potatoes still boiling.  They only needed about three more minutes.
 
Peel the potatoes
 
Spread the potatoes thinly on the dehydrator fruit roll up trays
 
Now this is where it gets a bit fiddly.  After 4 hours drying on the fruit roll up tray I took a spatula and peeled up the sweet potato, flipped it over and transferred it to the mesh tray. Sweet Potatoes take a bit more work but it is not hard. If you start with a clean kitchen most things are easier.
 
Put all the trays back on and get back to dehydrating.
 
After the sweet potatoes dry somewhere between 12 and 24 hours, mine took 18 hours then crumble it into a blender.
 
Pour into a canning jar or bags to air seal.  I use my food saver attachment to remove the air.  You can also us oxygen absorbers.
 
This is a pint jar and all "Nine" nice size sweet potatoes are in this jar.
 
About 3 Tablespoons of this ground sweet potato will equal one sweet potato
 
So now what do we do with this ground sweet potato?  We re-hydrate it so we can eat it!
 
For an example, I will rehydrate one Tablespoon of dehydrated ground sweet potato.
 
Put in Three Tablespoons of boiling water and stir.  Let it sit about 5 to 8 minutes.
 
Now you get creamy mashed sweet potatoes.  You can make pies, breads, soup, or just eat them mashed. You can use them in emergencies, or on a camping trip. You can seal them in smaller amounts. You can fiddle with the re-hydrating by reducing the amount of water or adding more to get it just right.
 
Make sure that you air seal what you dehydrate so it will keep longer and read the directions in the books that comes with the dehydrators. People have been dehydrating food since ancient times, they knew that removing the water from the food preserves the food.  If you don't remove the water from the food the food will spoil so dehydrating food is a good way to preserve it.  You should read all you can and learn all you can about food preservation because it is the smart thing to do.  I did not start dehydrating food until I felt I knew enough to be smart about it. You need to be smart about food storage and not take any short cuts.
 
Don't be afraid of over dehydrating your food.  If you don't dehydrate long enough the food will be leathery and could spoil.  I give it a little longer until it snaps and is crispy and dry.
 
We use our dehydrated food and rotate it every time we add more to the shelf.
