My family went through a number of years when we were very poor. We didn't have food stamps, and everything depended on me to make something out of nothing when it was time to eat.
I made lots of biscuits, learned to make bread, soups from minimal ingredients, etc. I remember one day I was in the grocery store, with $10 for a week's worth of food and nearly nothing at home. I was praying and nearly crying (about 1993) as I walked through the store looking for the very cheapest ingredients. I remember haggling with the butcher to just buy two or three chicken backs to make soup with, because I couldn't afford a package. It's sad to think back on. I knew I would be able to feed my husband and toddler biscuits if I could keep flour, oil, margarine and baking powder in the house. Another time, years later, I my husband's grandma gave us 6 quarts of apple butter. It was biscuits or bread with apple butter for many meals.
Many of the things y'all have written about have come naturally as I tried to cook cheaper and cheaper. Was it healthy? Maybe not, but my kids didn't have to go hungry.
Glad times are better now.
