Oh, thanks for this recipe. It's reads sherly good. In Germany we eat sutch muffins at the Afternoon with a cup of coffee. I will bake it. next days.

PSA to everyone, if you want to keep a cloth for oiling pans, make sure you never put it in the washer or dryer. it is a fire risk. Handwashing and hang/lay flat to dry will be the only safe option.
G. Donna. Those look so delicious!! I'll have to try this. I have a question, hoping you will answer. We've been going through our dishes and trying to rid ourselves of anything withe lead, yet not wanting to repurchase a bunch of dishes! They really add up for a larger family.
Do you have any advice on this topic? Do you and Charles concern yourselves with this when it comes to dishes, cutlery, etc?

Oh that sounds really yummy. Healthy too, with natural ingredients and not too much sugar. We forget that carrots and apples are very sweet all on their own and so lots of sugar is not needed. Got to try these.

For greasing baking tins I keep any trimmings from grease proof paper in the drawer as they are just right for this job

We use a silicon pastry brush to oil pans, as I find it easier to clean compared to a cloth. We also save butter wrappers in the fridge and use those for greasing things that will benefit from a bit of butter flavor, like a cake.

Please share what you are using to grate the carrot. I don't have anything like this. It looks like a good old timey handy tool to have that does not use electricity. Thank you.

Kim W_2, I meant to answer your question, it is a older grater, slicer and I no longer have the box for it so I was going to look it up to see if I could find one but got busy and forgot.
It has a suction that holds the grater/slicer in place while turning the handle. I did find one on ebay and it is called Kut Kleen Kutter Manual food processor Slicer Grater with 3 blades vintage. There does seem to be some more modern ones that are manual with the handle on ebay and also on Amazon. I hope this helps and sorry for the delay. Donna :)
Thank you for this recipe! I made it yesterday and my whole family enjoyed it. I wanted it to look like your cake from your previous post, so I baked it in two loaf pans and split them into two layers each. You didn't include a frosting recipe, so in keeping with the low-sugar idea I mixed up a stick of butter, a t. of vanilla, 1/4 c. granulated sugar, and one package of cream cheese. It was even better today when the frosting hardened. We do not miss all the sugar and I will be making this again!
