Harry S Truman was president when I was born and world war II had ended. I grew up in a time when lunch was put in a brown paper bag and a sandwich was wrapped with wax paper. There was no such thing as pantyhose, we wore stockings that attached to the rubbery clippy things that attached to the girdle. Convenience stores were not common and when we took a trip we packed a picnic basket because many places did not have fast food. Highways had places to pull over and stop, some with picnic tables. Homemade Chicken Stew

This is a good stew, easy to make and nourishing

 

Depending on your family size simply buy the amount of ingredients that you need.
Make sure your ingredients are fresh and nothing added.  Simple bagged carrots, potatoes and fresh chicken. If you like a lot of carrots, add a lot of carrots, if you like potatoes, add the amount you lke.  The amount of the ingredients are just how many you are cooking for.

 
Pure fresh Chicken thighs or breast whichever you like *Note make sure the chicken has no added products. In this stew pictured below I used boneless, skinless chicken breast and thighs
Carrots
Potatoes
Olive oil
Water
Seasoned salt
Garlic powder

 

Wash and prepare  your chicken, if the chicken you have purchased has the skin simply remove the skin before cooking to reduce the fat.
Pour a couple of tablespoons olive oil in the bottom of a large pot. Place washed chicken in the pot and season as you like. 


Sear the chicken on both sides then add enough water to the pot to cover the chicken.  Boil the chicken until tender and falling apart.  You may have to add water during cooking, keep the chicken covered with water. It usually takes the chicken about an hour and 15 minutes to cook, sometimes a little longer or shorter.  What  you are looking for is the chicken to be tender and falling apart. 


While the chicken is cooking, peel the carrots and potatoes then rinse them.  If you like a lot of carrots and/or a lot of potatoes add the amount you desire. Cut up the carrots and potatoes into bite size pieces
 
Remove the chicken from the stock
 
Put the chicken in a bowl just to keep it from over cooking while you cook the carrots and potatoes.
 
Add the chopped carrots to the stock and cook for about 15 minutes
 
After the carrots have cooked for fifteen minutes add the chopped potatoes. Do not remove the carrots, just add the pototoes to the pot.
 
Bring to potatoes and carrots back to boil, reduce the heat and cook until the potatoes are done, about another 10 to 12 minutes.  Don't over cook the potatoes because we will be adding the chicken back into the pot.
 
Add the chicken back in with the carrots and potatoes.
 
Stir it gently
 
Bring it to a gentle boil and boil only a few minutes
 
Enjoy this rich healthy Chicken Stew.
